Federico Aristizabal Velez


I’m Federico Aristizábal Vélez, a Colombian chef with an international career. Since 2014, my journey has evolved significantly, and today I create tailored culinary experiences in New York City and beyond.

My training at the Basque Culinary Center in San Sebastián, Spain, allowed me to specialize in the Creation of Gastronomic and Tourism Experiences. There, I discovered how food can connect cultures, places, and people through flavor.

I’ve had the privilege of working with renowned chefs such as Jean-Georges, Jimmie Rondón, Gabriel Kreuther, Javier Cárcamo, and Alirio Rodríguez, as well as enriching my experience at hotels like Marriott, Hyatt, Baccarat, and currently the prestigious Four Seasons Hotel in Downtown New York.

A key chapter in my career was my time at Water Street Associates (WSA) in Manhattan, where I helped build a culinary team from the ground up and design operational systems for new kitchens. With WSA, I took part in high-profile events such as:


  • Private dinners during New York Fashion Week (pop-up restaurant)

  • The official Met Gala After Party

  • The Nike Marathon
